In Kynidaros, one of the most remote mountain villages of Naxos, the Kounadis family has been producing kefalotiri since 1930 — nearly a century of unbroken cheesemaking tradition at the heart of the Aegean’s most gastronomic island.

The milk comes exclusively from their own goat and sheep herds grazing on the mountain pastures of Naxos — a complete farm-to-cheese cycle that guarantees the authenticity and quality of every wheel. An extended ageing of 20 months — among the longest for kefalotiri — develops an exceptionally deep and complex flavour, with intense notes of butter, roasted nuts, and salt, and a lightly crystalline texture that reveals every month of patient maturing.

Outstanding grated over pasta, risotto, and salads, pan-fried as saganaki, or served in thin slices on a cheese board with honey and figs. A cheese with soul — made by people who love what they do, for nearly a century.
