In the heart of Epirus, in the mountain village of Metsovo — one of Greece’s most iconic communities — the Tositsas Foundation Dairy has been producing for decades a cheese that is an inseparable part of Greek gastronomic heritage: Metsovone.

Made from Epirus cow’s milk blended with up to 20% goat and sheep milk, using traditional techniques passed down unchanged from generation to generation. Its characteristic elongated shape, tied with natural twine, and its golden smoked rind make it instantly recognisable on any cheese counter. The smoking process imparts a deep, warm aroma and a distinctive smoky note that harmonises beautifully with the cheese’s rich, supple texture.

Outstanding grilled or pan-fried as saganaki, melted over pasta, risotto, and pizza, or served in thin slices on a cheese board alongside red wine. Metsovone is more than a cheese — it is a journey to the mountains of Epirus.
