Smoked Parxarotyri Authentic Pontic Greek Cheese

Parxaria means the high mountains in the Pontic Greek dialect — and that is where this cheese was born. During the summer months, Pontic Greeks would take their herds up to the high mountain pastures, and there, far from the world below, Parxarotyri was made — a cheese of the mountains, of stillness, and of unbroken tradition.

Made from fresh semi-skimmed cow’s milk with veal rennet — a choice that gives the cheese a mild, clean flavour with a delicate creamy base. It is then smoked with aromatic herbs, which add depth to the flavour in a gentle, refined way without overpowering it. A minimum ageing of 12 months follows, allowing the cheese to develop its rich, complex character fully.
